Step 3: Understand the mandatory Food Hygiene Rating Scheme

Wales is one of only two UK nations (alongside Northern Ireland) where displaying your food hygiene rating is mandatory by law. After your first inspection, you must display the rating sticker where customers can see it. Failure to display your rating, or displaying a false rating, is a criminal offence carrying a fixed penalty notice of 200 pounds or a fine of up to 1,000 pounds (level 3) on prosecution.
