• CCTV footage: Preserve any relevant footage — do not allow it to be overwritten
• Incident logs: Compile your incident log entries for the relevant period
• Training records: Show that staff have been trained on age verification, conditions, and responsible serving
• Refusal logs: Demonstrate your age verification policy is working
• Compliance history: Gather evidence of past compliance, positive inspection reports, and any awards or accreditations
